Healthy Cooking Courgette, Cauliflower and Chickpea Curry Introducing young children to a variety of flavours and textures is important to ensure a balanced and nutritious diet, helping them to learn healthy eating habits and preferences. For a quick, nutritious and healthy meal, why not try making this tasty Courgette, Cauliflower and Chickpea Curry? Serves 4 Ingredients: 1 tbsp olive oil 1 small onion, finely chopped 2 tsp mild curry paste 1 tbsp tomato puree 300ml vegetable stock ½ medium cauliflower, cut into florets 2 medium courgettes, diced 400g chickpeas, rinsed and drained 250ml natural bio yoghurt Method: Fry the onion with the oil over a gentle heat until softened. Add the cauliflower and courgettes and cook for a further 2 minutes. Stir in the curry paste, tomato puree, chickpeas and vegetable stock. Cover and simmer for 20 minutes. Remove from heat and allow to stand for 10 minutes before stirring in the yoghurt.
