Ⱦeʎʖȼɏ... FOOD REVIEW RAVISHING RUBY LAMB METHOD 1. To make the accordion roasted potatoes: Pre-heat the oven to 180°C/160°C Fan. Cut slices into the potatoes so the slits almost reach the bottom of each potato. Par-boil them for three minutes. Place on a baking sheet, spray with low calorie cooking spray and place in the oven until golden and crispy. Meanwhile, cook the green beans. 2. To make the lamb: Brush the lamb steaks with Worcestershire sauce. Pull the needles from one rosemary sprig, chop up fi nely and place in a bowl. Chop the garlic up fi nely and add to the bowl. 3. Spray a heavy-based saucepan with low calorie cooking spray and add the lamb. Cook for three minutes on each side, remove and then place in foil to rest. 4. Add low calorie cooking spray to the juices left in the pan and add the rosemary sprigs. Cook for a few minutes. Add the garlic and cook for a few minutes. 5. Mix in the redcurrant jelly and allow to loosen. Add the port and, on a gentle simmer, allow to reduce. Add some boiling water if you would like more sauce. 6. Remove the lamb from the foil, arrange on a plate with the potatoes and green beans. Place the sauce on top of the lamb. Cut the remaining rosemary sprig on half and garnish the plate. This sumptuous lamb dinner is ideal for entertaining guests - especially that special someone!
